Pink Apple Juice: I make my own applesauce and don’t peel the apples first. I used the liquid that was left after the apples were cooked as my apple juice in this recipe.
Other Tweaks: Decrease the baking time for the sweet potatoes. Slice the apples thinly, so they cook a little more. The apples had a little crunch in the final dish, and the sweet potatoes were soft. A larger baking dish might also allow the syrup to cover more apples and potatoes. Despite the inconsistency in texture, I love this recipe!
