I’m in beautiful Costa Rica this week hosting a women’s wellness retreat, and in between the magic of the mountains and the soul-nourishing workshops, I’m sharing three of my all-time favorite recipes with you!

These dishes are comforting, packed with flavor, and perfect for any season:
Smothered Jackfruit – tender, juicy, and full of smoky depth
Vegan “Crab” Cakes – crispy on the outside, flaky and savory on the inside
Creamy Orzo Pasta – silky, rich, and totally plant-based

Smothered Jackfruit Ingredients
1 (20 oz) can green jackfruit (in water, drained)
1 tbsp sugar
All-purpose seasoning, to taste
2 tbsp cornstarch
1 tbsp coconut oil
2 tbsp grapeseed oil, divided
1/2 yellow onion, diced
1 plum tomato, diced
2-3 sprigs fresh thyme
1 stalk scallion, sliced
1 scotch bonnet pepper, slightly cut in half
1 tbsp Better Than Bouillon No Chicken Base
1 cup water
1/4 cup full-fat coconut milk
1 tsp blackstrap molasses
1/2 tsp cornstarch, mixed with 1-2 tbsp cold water (for thickening)
Salt and black pepper, to taste

Crabless Cakes Ingredients:
(Makes 6-8 small cakes)
1 can young jackfruit, drained and shredded
¼ cup chickpea flour (or almond flour for keto)
2 tbsp ground flaxseed + 4-5 tbsp water (flax egg)
2 tbsp vegan mayo
1 tbsp Dijon mustard
1 tbsp lemon juice
1 tsp Worcestershire sauce (vegan)optional
1 tsp Old Bay seasoning
½ tsp smoked paprika
½ tsp garlic powder
½ tsp onion powder
¼ tsp sea salt
1 sheet nori, or 3-4 roasted seaweed sheets crumbled (for seafood flavor)
¼ cup finely diced celery
¼ cup finely diced red bell pepper
½ cup breadcrumbs (panko or keto-friendly)
2 tbsp oil (for frying)

Creamy Orzo Pasta Ingredients:
1 cup orzo pasta
2 tbsp olive oil
3 cloves fresh garlic, minced
2 ½ cups water
1 tsp Better Than Bouillon Vegan Chicken Base
1 cup coconut milk (full fat)
½ cup vegan mozzarella cheese
¼ cup vegan Parmesan cheese
2 cups broccoli florets
Salt and pepper, to taste
