Crispy Salmon Burger with Smoky Chipotle Lime Mayo
Featuring Garlic of Eden, Creole Kick, and When Life Gives You Lemons

Ingredients
For the Salmon:
* 1 cup buttermilk
* ½ cup hot sauce
* Two 8-ounce skinless salmon fillets
* Neutral oil for frying
* 2 brioche buns, lightly toasted
* Romaine lettuce
* Sliced tomato
* Optional: pickled red onions, sliced avocado
Seasoned Flour:
* 1 1/2 cups all-purpose flour
* 1 tbsp Garlic of Eden
* 1 tbsp Creole Kick
* 1 tbsp When Life Gives You Lemons
* Pinch of salt (optional)
Smoky Chipotle Lime Mayo:
* ½ cup kewpie mayo
* 1–2 chipotle peppers in adobo, finely chopped
* Juice of half a lime
* ¼ tsp smoked paprika

Instructions
1. In a bowl, mix the buttermilk and hot sauce until well combined. Add the salmon, making sure it’s fully coated. Cover and chill for at least 30 minutes so the flavor can really soak in.

In a separate bowl, stir together the flour with Garlic of Eden, Creole Kick, and When Life Gives You Lemons. Sprinkle in a little salt if you like.

In a small bowl, mix together the mayo, chipotle, lime juice, and smoked paprika until smooth and smoky. Set aside.
4. Pour about 2½ cups of oil into a medium pot and heat it up to around 375°F. You want it hot enough to crisp the salmon without overcooking it.
5. Pull the salmon from the marinade, let the excess drip off, and coat it fully in the seasoned flour. Press it in so every edge gets a nice, even layer. If you want extra crunch, double dip the salmon—once in the marinade, back into the flour—before frying.
6.Carefully lower the salmon into the hot oil and let it cook for about 6 to 8 minutes, or until the coating is deeply golden and the fish is cooked through. You’ll know it’s ready when it’s crisp and feels light when lifted with tongs.
7. Spread that smoky mayo on the toasted brioche buns, layer in some lettuce and tomato, then add your crispy salmon. Want to take it even further? Top with pickled onions or creamy avocado.
