Sinners – Quick Pickled Garlic Recipe

Ingredients:
* 2 cups fresh peeled garlic cloves (from about 6 fresh heads) – avoid pre-peeled garlic for best results
* ½ cup apple cider vinegar (5% acidity)
* ½ cup white vinegar (5% acidity)
* 1 cup distilled or filtered water
* 1 teaspoon pickling, sea, or kosher salt (not iodized)
* 1½ teaspoons sugar
* 1 teaspoon mustard seeds
* 1 teaspoon black peppercorns
* 2 bay leaves
* 1 sprig fresh dill per jar

Instructions:
1. Blanch the garlic in boiling water for 30 seconds, then transfer to ice water to cool.
2. Rinse a 8 oz jar with hot water, boil for 5 minutes to sterilize, and let air dry.
3. Add garlic to jar. Add mustard seeds, peppercorns, bay leaves, and dill (if using).
4. In a saucepan, combine the apple cider vinegar, white vinegar, water, salt, and sugar. Bring to a gentle boil, stirring until the salt and sugar dissolve.
5. Pour the hot brine into the jar, leaving ½ inch of headspace. Make sure the garlic is fully submerged.
6. Wipe the rims clean, seal with lids, and let the jars cool to room temperature.
7. Store in the fridge.
8. Let the garlic pickle for at least 2 weeks before tasting. The longer it sits, the more mellow and flavorful it becomes.

**If your garlic turns a little green or blue, don’t worry, it’s totally safe to eat. It’s just a natural reaction between fresh garlic and vinegar. Still delicious, still powerful. **
