Healthy strawberry chia seed jam

Ingredients:
• 2 cups fresh or frozen strawberries (hulled and chopped)
• 1–2 tablespoons maple syrup (or to taste)
• 2 tablespoons chia seeds
• ½ teaspoon lemon juice (optional, for brightness)
Instructions:
1. Cook the strawberries:
In a small saucepan over medium heat, cook the strawberries for about 5–8 minutes, stirring occasionally until they break down and get syrupy. You can mash them with a fork or potato masher for a smoother texture.
2. Sweeten and thicken:
Once soft, stir in the maple syrup and lemon juice. Remove from heat, then stir in the chia seeds.
3. Let it gel:
Allow the mixture to sit for about 10–15 minutes. The chia seeds will absorb liquid and create a jam-like consistency.
4. Cool and store:
Transfer to a jar and let cool. Store in the fridge for up to 1 week.

Vegan Crepes
Ingredients:
• 1 cup all-purpose flour (or gluten-free blend)
• 1 ½ cups plant milk (oat, almond, or soy work great)
• 1 tbsp maple syrup (optional for sweet crepes)
• 1 tbsp melted coconut oil or neutral oil
• ½ tsp vanilla extract (optional)
• Pinch of salt

Instructions:
1. In a mixing bowl, whisk together all the ingredients until smooth—no lumps. You can also blend it for an ultra-smooth batter.
2. Let the batter rest for 10–15 minutes (optional, but helps texture).
3. Heat a nonstick skillet over medium heat and lightly grease it.
4. Pour about ¼ cup of batter into the pan and swirl to coat evenly.
5. Cook for 1–2 minutes until the edges lift, then flip and cook another 30 seconds.
6. Repeat with remaining batter.
