Walnut Meat Sloppy Joes
Servings: 4
Ingredients
For the Walnut “Meat
1 ½ cups raw walnuts
1 cup cooked lentils (or canned, rinsed and drained)
2 tsp smoked paprika
1 tsp chili powder
1 tsp cumin
1 tbsp soy sauce or coconut aminos
1 tbsp tomato paste
2 garlic cloves
Salt and pepper to taste
For the Sloppy Joe Sauce:
1 tbsp olive oil (or water for oil-free)
½ onion, finely chopped
½ red bell pepper, diced
1 cup tomato sauce (or crushed tomatoes)
1 tbsp maple syrup
1 tbsp apple cider vinegar
1 tsp mustard (Dijon or yellow)

For Serving:
Whole grain buns or lettuce wraps

Pickled onions or slaw (optional)

Avocado slices (optional)

Instructions
Make the Walnut Meat:
In a food processor, pulse walnuts until crumbly (not too fine).
Add lentils, garlic, tomato paste, soy sauce, and spices. Pulse a few times until combined but still textured.
Set aside.

Cook the Base:
In a skillet, heat olive oil. Sauté onion and bell pepper until soft (about 5 minutes).
Stir in the walnut-lentil mixture and cook for another 3–4 minutes, stirring occasionally.
Add the Sloppy Joe Sauce:
Pour in the tomato sauce, maple syrup, vinegar, and mustard.
Stir to combine. Simmer on low for 5–8 minutes, letting the flavors meld and the sauce thicken.

Assemble:
Spoon mixture onto toasted buns or lettuce wraps.
Top with optional pickled onions, avocado, or a crunchy slaw.
